Cha Ca Fish Tacos

Cha ca fish tacos carry Hanoi's #31 — turmeric-dill fish, the herb mountain, the peanuts — into a tortilla. The crossing is almost lazy in its naturalness: the original dish is already fish-plus-herbs eaten wrapped and dipped; the taco is simply the wrap. This is the block's lightest-touch recipe and one of its best.

The herb mountain and kit

- **Marinate 2 hours** — the #31's own clock — and read its note on dill: this dish's strangest, truest pairing, non-negotiable in either format.
- **The bridge:** the taco needs no bridge — the herb mountain maps directly (dill and scallion in the warm toss; cilantro, mint, and lime at the table). The funk dial (shrimp paste/mắm tóm) runs at the same honesty as the original.

Ingredients
The fish (the #31 marinade, whole)
- 600 g firm white fish (catfish, cod, halibut), cut in chunks
- 1½ tbsp fresh turmeric, grated, or 1½ tsp ground; 1 tbsp fish sauce (about 15 ml)
- 1 tbsp shrimp paste or extra fish sauce (the funk dial — see the #31 note); 1 tsp sugar
- 3 cloves garlic, minced; 1 tbsp minced galangal or ginger; 1 tbsp oil
The herb mountain and kit
- 40 g dill, in sprigs; 30 g scallions, in lengths — the #31's identity
- A handful each cilantro and mint (about 15 g each); lime wedges
- 60 g roasted peanuts, crushed
- 8 small corn tortillas (about 200 g), warmed
- The #25's nuoc cham for the dip (or the #31's mắm tôm for the full funk)
Instructions
- **Sear the fish hot (6 minutes).** Sear the marinated chunks in a single layer in hot oil, turning once, until turmeric-gold and just cooked (63 °C) — then, in the same pan's residual heat, flash the dill and scallions for 90 seconds (#31's law: wilted, charred at the edges, still green). Checkpoint — the fish should be crusted in turmeric and holding its shape; the herbs should smell of hot dill — the signal — and stay vivid. Do not let the herbs go dark.
- **Warm the tortillas.** Flame, dry pan, or foil — hot, pliable, cloth-wrapped. Checkpoint — the tortilla's warmth is part of the cooking: the fish and herbs finish steaming in it on the way to the table.
- **Build: fish-and-herb tangle, peanuts, dip.** Each taco: a spoon of the fish tangled with its dill-scallion, peanuts crushed over, a dip through the nuoc cham, lime at the end. Checkpoint — eating test: the turmeric fish's sear, the dill's hot anise (still strange, still perfect), the peanut's crunch, the sauce's sour-salt, the tortilla's corn sweetness — the #31's whole collision, format-shifted. It should taste less "invented" than "recognized": two wrapped-fish traditions shaking hands, with the herb mountain standing between them.
