Khao man gai — Thai chicken rice — is the Hainanese chicken rice (#16 on our sister site) as Thailand absorbed it: a whole poached chicken over rice cooked in its own broth, served with Thailand's own sauce, a fermented-bean-chili-ginger condiment unlike any other. The technique transfers whole from the Hainanese doctrine; the sauce and the clean Thai garnishes make it a different meal.

- **Poach by the cold-start doctrine.** The chicken goes into cold water with aromatics, comes to the barest simmer, cooks gently to doneness, then shocks in ice water for the skin's silk — the full Hainanese law (#16 carries the detail). The broth left behind is the rice's cooking liquid and the soup's base. - **The bridge:** tao jiao (fermented soybeans in jars) is the sauce's soul and bridges to miso at a real loss of funk and grit. The two-sauce table — the loud bean sauce and the quieter soy-ginger — is how the stalls serve it, and it covers every palate.
Step 1. **Poach the chicken (40 minutes including rest).** The water climbing to the barest simmer — about 90 °C, the surface's shiver — then the covered rest. Cold start, bare simmer 20 minutes covered, heat off 15 more in the water, then into ice water 5 minutes. The poaching liquid becomes broth. Checkpoint — the thigh joint should read 74 °C and the juices run clear; the ice-shocked skin should be tight, smooth, and faintly gelatinous. The flesh should be fully cooked but still slippery-tender — the Hainanese-Thai standard, never falling apart.
Step 2. **Cook the rice in its own broth (20 minutes).** Sizzle the garlic and ginger in the chicken fat, add the rice and stir 2 minutes to coat each grain in the fat, then add the hot strained broth and salt, cover, and cook at the lowest bubble 12–14 minutes, then rest 10 off heat. Checkpoint — the finished rice should be glossy, each grain distinct but savory through-and-through — tasting of chicken, not chicken stock cube. Ingredients

  • 1 piece ginger (40 g), sliced; 4 cloves garlic (about 15 g); 2 spring onions (about 30 g); 1 tsp salt (about 5 g)

The rice

  • 400 g jasmine rice, rinsed and drained (about 480 g cooked)
  • 3 tbsp chicken fat or neutral oil; 4 cloves garlic, minced; 1 tbsp minced ginger
  • 500 ml the chicken's broth (strained); ¾ tsp salt (about 4 g) — the rice's seasoning is deliberate

The sauce — the Thai signature

  • Makes about 150 ml
  • 3 tbsp fermented soybeans (tao jiao) or 2 tbsp miso + 1 tsp soy sauce
  • 2 tbsp chicken broth (about 30 ml); 1½ tbsp sugar (about 15 g), dissolved fully before the chili joins
  • 2 tbsp rice vinegar or lime juice; 2 bird's eye chilies, minced; 1 tbsp minced ginger; 2 cloves garlic, minced
  • Mash the beans and stir everything together — thick, chunky, loud

To serve

  • Cucumber slices (about 100 g); cilantro (about 10 g); the #25-style clear broth, warmed; a dish of soy-chili-ginger sauce beside the main sauce (the tables always offer both)
