Kimchi Fried Rice Arancini

Kimchi fried rice arancini close the loop the #120 opened: leftover kimchi bokkeumbap (fried rice), chilled, balled, breaded, and fried — the risotto-to-arancini method applied to Korea's own leftover-rice dish. The sour kimchi runs through the molten center, mozzarella pulls inside, and the gochujang-mayo dips.

- **Make the fried rice first and chill it hard — 3 hours minimum.** The balling demands cold, sticky rice; warm rice crumbles at the breading. The egg yolk in the mix is the extra binder the arancini format asks for.

Ingredients
The rice (a half-batch of kimchi fried rice, made ahead)
- 300 g day-old cooked rice (short-grain, sticky — the arancini needs it)
- 100 g ripe kimchi, chopped and squeezed (the #129's law), plus 1 tbsp of its juice
- 1 tbsp gochujang (about 20 g); 1 tsp soy; 1 egg yolk, to bind
- 100 g mozzarella, cut in 1 cm cubes (the melt core), frozen 20 minutes
The breading and fry
- 60 g flour; 2 eggs, beaten; 120 g panko
- Neutral oil, 4 cm deep, at 180 °C
The dip
- 3 tbsp mayo (about 45 g); 1 tbsp gochujang (about 15 g); a squeeze of lime
Instructions
- **Make and chill the kimchi fried rice.** Stir-fry the kimchi in a little oil until fragrant, add the rice and sauces, fry 3 minutes to a uniform orange-pink, and stir in the egg yolk off the heat. Spread on a tray and chill 3 hours. Checkpoint — the chilled rice should be cold, slightly sticky, and cohesive when squeezed — taste it: distinctly kimchi fried rice, slightly under-salted (the frying and the dip will add).
- **Ball around the cheese.** With wet hands, flatten a palmful of the cold rice, set a mozzarella cube in the center, and close the rice around it, rolling to a smooth ball (about 45 g each). Bread: flour, egg, panko, pressed on hard. Checkpoint — each ball should be fully sealed — no cheese visible (a leak in the fryer is the failure) and the breading even. The frozen cheese cubes buy the fryer time.
- **Fry (3–4 minutes at 180 °C), in small batches.** Fry until deep golden, turning gently; drain and salt lightly. Rest 2 minutes before serving (the center is molten-lava). Checkpoint — eating test (mind the heat): the panko's crunch, the rice's sticky-savory center with the kimchi's sour-heat running through it, and the mozzarella's long pull in the middle — dipped in the gochujang-mayo, it is the block's whole fried-snack argument. The arancini format has carried Korean flavors without losing a single one.
