Lemongrass beef tacos run the #39's master marinade into skirt steak and a tortilla: Vietnam's lemongrass-fire on Mexico's perfect delivery vehicle, with the pickles and herbs both cuisines love. This is the block's most natural crossing — Vietnamese food and Mexican food already agree on herbs, pickles, lime, and eating with your hands.

The tacos

- **Marinate 1 hour.** The #39's law at steak scale: the lemongrass-fish sauce marinade needs the hour, and skirt steak's loose fibers drink it fast. Save a spoon of the marinade to brush the grill. - **The bridge:** none structural — the crossing is the recipe. Corn tortillas are the choice (their corn sweetness meets lemongrass beautifully); flour works at a small loss.
Step 1. **Grill hot (3–4 minutes a side).** Grill or pan-sear the steak over the highest heat — charred in patches, medium-rare within (54 °C), resting 5 minutes before slicing thin against the grain. Checkpoint — the edges should be caramelized-dark from the honey and the char, the center rosy. Skirt's thinness means the window is short — pull it at the firm-but-yielding press. Slice against the grain and short, taco-length.
Step 2. **Warm the tortillas.** Directly on the flame, in a dry pan, or wrapped in foil in the oven — hot and pliable, kept wrapped in a cloth. Checkpoint — a warm tortilla is the taco's half; a cold one cracks and ruins the architecture. This step is never optional.

Ingredients

The beef

  • 500 g skirt or flank steak, in 2–3 pieces
  • 2 stalks lemongrass (about 60 g), tender parts minced fine
  • 3 cloves garlic (about 12 g), minced; 1 tsp minced ginger
  • 2 tbsp fish sauce (about 30 ml); 1 tbsp soy; 1 tbsp honey or sugar (about 15 g)
  • ½ tsp turmeric; black pepper; 1 tbsp oil

The tacos

  • 8 small corn tortillas (about 200 g)
  • The #25 quick pickles (carrot-daikon), drained; sliced cucumber
  • A handful each cilantro, mint, and Thai basil (about 10 g each); sliced chili
  • Lime wedges; sriracha or the #86's jaew bong; mayo-thinned-with-lime optional
