Shan Tomato Bruschetta

Shan tomato bruschetta is the #92's sauce on Italy's toast: the soft-spiced tomato-and-chicken ragù spooned over garlic-rubbed grilled bread, the block's smallest crossing and the fastest argument that the Shan noodle sauce was always a bruschetta topping waiting for its vehicle.

Ingredients
The Shan topping (a half-batch of the #92's sauce)
- 200 g ground chicken (or mushrooms, the vegetarian Shan)
- 1 tbsp oil; 2 cloves garlic (about 8 g), minced; ½ onion (about 75 g), diced
- 3 tomatoes (about 250 g), grated or diced small
- 1 tsp paprika or mild chili; ½ tsp turmeric; ½ tsp ground coriander
- 1 tbsp fish sauce (about 15 ml); ½ tsp sugar; 3 tbsp water — simmered to the #92's loose-sauce body
The bruschetta
- 8 thick slices baguette (about 250 g), grilled or toasted hard
- 1 clove garlic, for rubbing; 2 tbsp olive oil (about 25 g)
- The #40-style fried garlic and its oil; cilantro or Thai basil (about 10 g); lime wedges; sliced chili; a pinch of the #46's toasted rice powder, optional
Instructions
- **Make the Shan sauce (15 minutes).** Per the #92: aromatics fried golden, spices for a minute, chicken crumbled and colored, tomatoes cooked down, the sauce simmered loose and glossy with the fish sauce and sugar. Cool slightly. Checkpoint — the #92's own: soft red-orange, spoonable, gently spiced — the tomato's sweetness and the turmeric's warmth, fish sauce's savor beneath.
- **Toast and rub.** Grill or toast the bread hard — golden-striped and rigid — then rub each slice once with the cut garlic and brush with oil. Checkpoint — the bruschetta's law: the bread must crackle and hold. A soft slice is a failed slice, and this topping is moist.
- **Spoon, crown, serve immediately.** Each slice with a generous spoon of the warm Shan sauce, the fried garlic and oil over, herbs and chili, a lime squeeze, the optional rice-powder pinch.
